For the first time in years, My man & I found ourselves bound to the north in the heat of July. Traditionally, we travel to Georgia, but had opted cooler trip in early May. It was glorious, but, now July was missing that southern spark. I was daydreaming of peach pie, pimento cheese & pralines, day after day.
One Sunday in the mists of this home-away-from-home-sickness, Sean & I trekked to a local flea market. Local vendors from Salem, Ohio had gathered with a bevy of incredible produce. I couldn’t resist the green tomatoes, peaches or peppers, so I jam-packed the car with as many goodies as I could fit. I racked my brain, and scoped out the pantry to see just what I could whip up. This is what I came up with, and MAN, did it hit the spot. Sweet, spicy & tart, this dish checks all of the boxes of an ideal southern flavor profile.
