Toasted Coconut Pancakes with Maple Peanut Butter Spread

It’s all too easy too make the most of the morning when the you start the day with a sweet stack of pancakes.   I set the alarm an hour early, brew up some coffee, put on my stones vinyl and get crackin’.  Time to wander outside while the world is still silent and still. I dress up the table with peony blossoms picked with dawn’s fresh dewdrops still glistening.  It’s going to be an exceptional day.  Mornings were made for (self)indulgence, and these fluffy buttermilk flapjacks fit the bill, whipped up with love and loaded with toasted coconut, walnuts, and a dreamy maple peanut butter spread.

Start your morning  s l o w  &  take the time to treat yourself.  Fuel up with a sinful breakfast and find your balance before the break of day.

You will need:
  • ½ cup shredded unsweetened coconut
  • 2 cups all purpose flour
  • 1 tablespoons raw cane sugar
  • 1 tablespoons palm sugar
  • 2 teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 2 cups buttermilk
  • 3 tablespoons oil
  • 1 egg
  • ¼ cup toasted chopped walnuts
  • 1/4 cup of creamy peanut butter
  • 1/4 cup of grade A maple syrup
  • 2 tablespoons local honey
  • butter for the griddle or skillet.
  • butter and syrup for serving

Next, whisk together the flour, cane sugar, palm sugar, baking powder, baking soda, and salt, in a large bowl.  Get your skillet or pancake griddle heated to a medium high temp. and butter generously. Make a small well in the center of the dry ingredients. Pour in the buttermilk, egg and oil, then whisk until just combined– leave the batter slightly lumpy, but ensure there are no dry pockets.

Fold in the chopped walnuts and toasted coconut. To measure out the batter, use a ¼ dry measuring cup to portion out my pancake batter. Cook on the first side until the top is nearly covered in bubbles. Flip and cook the other side for about one minute.

For your maple-peanut butter spread, heat the peanut butter over a very low heat in a sauce pan. Add in your maple syrup next, and then the honey.  Stir thoroughly as you add each ingredient. Remove from heat, and pour over pancakes as they come hot off of the griddle. (Add spread or butter between the layers)

Time to grin & dig in! Top with more toasted coconut & serve with a fresh cup of coffee. Y U M.  These pancakes are perfect for a laid back morning by yourself or for a big bruncheon with family. Relax your way through the day & pile up a stack of these sweets to start with a syrup-kissed smile.
